Hi There, ethnic description is stored in the database and not in a file. You will have to use a utility like phpmyadmin or be able to use SQL commands from the command line in order to modify the entries.
The table in question is 'eeo_ethnic_type'
You should be able to add as many entries as you like and edit/modify/delete any of the existing ones. I hope this helps!
